For Orlando, Sapphire Reserve Exclusive Tables currently has a short list of 3 participating restaurants. The list has changed, with 1 restaurants appearing to be new and 3 earlier restaurants not showing now. The credit is useful only if the restaurants fit how you already plan to dine.
Eligible Chase Sapphire Reserve® and J.P. Morgan Reserve cardmembers can receive up to $300 per calendar year in statement credits at Sapphire Reserve Exclusive Tables restaurants through OpenTable.
The credit is split into two windows:
To use the credit, dine at a participating Sapphire Reserve Exclusive Tables restaurant and pay with an eligible card. The credit does not apply to every OpenTable restaurant, unused credits do not roll over between the two six-month periods, and participating restaurants can change.
Eligible cardmembers can also link an eligible card on OpenTable for access to special or primetime reservation inventory. Terms apply.

The Pinery sits in Ivanhoe Village on Lake Ivanhoe, serving Southern-leaning, chef-inspired food in a room built around Florida history, pineapple-farm roots, and lake views. Use the credit for a sunset dinner or local Orlando date night away from the theme-park corridor.
Norman’s on the I-Drive/Sand Lake corridor is James Beard-winning chef Norman Van Aken’s Florida kitchen, with steaks, seafood, cocktails, wine, private rooms, terrace seating, and smart-casual dress rules. The credit is a useful offset before or after convention-area plans.
AVA MediterrAegean in Winter Park is a polished Greek and Mediterranean restaurant built around a lively “modern agora” atmosphere, brunch, lunch, dinner, and group energy. The credit works for a stylish night out where shared plates and cocktails can quickly reach $150.
Start with The Pinery. With 3 current options, the benefit is more situational than automatic.
The Pinery, Norman's - Orlando, AVA MediterrAegean Winter Park. These are the names that make the most sense as a normal dinner shortlist rather than a statement-credit scavenger hunt.

That does not necessarily mean they are gone permanently. OpenTable participation can change, so check the current page before booking.
Orlando looks like a weak market for using the Sapphire Reserve Exclusive Tables credit, but only if the eligible restaurants overlap with places you would actually visit.
The up to $300 annual credit is useful when it reduces the cost of a meal you were already planning. If Orlando's list changes where you eat just to use the benefit, value it at less than face value.
Before booking, check the current OpenTable Sapphire Reserve Exclusive Tables page for Orlando and make sure the restaurant is still participating.
