Taking a look through the terms, any purchases made on Amazon qualify:
" Amazon.com purchases include those made through the Amazon.com checkout, including digital downloads, Amazon.com gift cards, Amazon Fresh orders, Amazon Local Deals, Amazon Prime subscriptions and items sold by third party merchants through Amazon.com's marketplace."
Purchases made at Target and target.com count towards 5%, but merchants within the store, like Starbucks, do not.
"Target purchases include any purchase made online or in-store at Target and SuperTarget. Individual merchants and stand-alone stores within physical Target locations may not be eligible in this category."
IMPORTANT: purchases made with Apple Pay, Samsung Pay, or any other digital wallet DO NOT count towards 5% because they won't code as Target.
"Purchases made using third-party payment accounts, tap-and-pay, mobile or wireless card readers, virtual wallets or similar technology may not be eligible."
Another note is that cash back rewards will be issued within two billing statements. If you're within the first year of having a Discover It card, then you can effectively earn 10% cash back with Cashback Match.
